  • This is a great plant that has many uses. It grows very fast and is therefore good as green manure. Bees love it. The leaves and flowers are edible. It is an anti-depressant and has many other medicinal uses.

  • Today we used borage leaves and flowers in a mayonnaise sauce added to a fish dish. Borage leaves and flowers, garlic and fresh onion greens finely cut, some soya sauce, pepper, lemon juice (or vinegar), mustard and mayonnaise. The borage gives a very refreshing taste to the sauce.
